Patatas bravas, spicy potatoes, are one of the most famous and essential tapas dishes in Spain. They are often enjoyed with a beer at a bar in the afternoon or evening. Some bars and restaurants make a real spectacle of the patatas bravas by adding their own sauce or special presentation. The following recipe, in my opinion, comes closest to the patatas bravas of Bar Tomás, considered by many to be the best in Barcelona.
Ingredients
For 4 people:
- 4-6 potatoes
- 1 clove of garlic
- 2-3 tbsp mayonnaise
- 1 tbsp white wine vinegar
- 1 tsp cayenne pepper
- Olive oil
- Spicy paprika powder
- Salt
How to Make: Patatas Bravas
- Cut the potatoes into even cubes (with or without skin). Bring a large pot of salted water to a boil. Add the potatoes and cook until tender. Then drain them.
- Add some olive oil to a pan (about 1 or 2 cm deep) and fry the boiled potato pieces until they are golden brown. Drain them on kitchen paper.
- Peel and press the garlic. Mix 2 tablespoons of olive oil with the garlic, vinegar, a little paprika powder, and the cayenne pepper in a bowl.
- Put the potatoes in a dish and sprinkle some salt on top. Serve as a snack in small bowls. Pour the mayonnaise and sauce over the potatoes before serving.
