Spanish: Huevos estrellados, huevos cabreados or huevos rotos

Catalan: Ous estrellats, ous cabrejats or ous trencats

Huevos estrellados, huevos cabreados or huevos rotos (also known as broken eggs) is a popular tapas dish that combines fried eggs with fries, often with pieces of serrano ham and a basket of baguette on the side. The runny yolk, which mixes with the fries when you cut into it, makes it a delicious dish.

Ingredients

Ingredients For 4 people:

  • 1 kg potatoes for frying
  • 4 eggs
  • 150 gr serrano ham
  • Picos andaluz or baguette
  • Olive oil
  • Salt

Recipe: Huevos estrellados

  1. Peel and cut the potatoes into thin strips or pieces. Pour a finger-thick layer of olive oil in a non-stick pan and fry the potatoes in it. Stir occasionally so that all the potatoes are well cooked. Another option is to cut the potatoes into cubes, briefly boil them in hot water, and then fry them in a pan with olive oil.
  2. When the potatoes are almost ready, it’s time to fry the eggs. Put some olive oil in another pan and let it get hot. Fry the eggs one by one in it.
  3. Sprinkle some salt over the potatoes and eggs and serve on a plate along with the serrano ham and the picos andaluz (Spanish dipping sticks). A basket of baguette can also be used instead of the picos andaluz.
